Bbq grill and kabob cupcakes

I used candy melts to make the grill. Simply melt candy melts, add to piping bag, draw circles on plastic wrap. Allow to dry, gently peel off and place on top of iced cupcakes.  Kabobs are gummy bears on a toothpick.

Coca cola cupcake

Coca Cola Cupcakes

Yield: 24 cupcakes
Pre heat oven to 350
Suggestion: Use room temperature eggs

2 cups sugar
2 cups all-purpose flour
1 1/2 cups small marshmallows***** Leave out and drop in each cupcake*****
1/2 cup butter or margarine
1/2 cup vegetable oil
3 tablespoons cocoa
1 cup Coca-Cola®
1 teaspoon baking soda
1/2 cup buttermilk
2 eggs
1 teaspoon vanilla extract

I added everything in a mixer and poured ingredients into a mixing bowl, except the marshmallows.
Cut/tear marshmallow in 4 pieces and drop in the tops of the cupcakes.
Bake approx 20 minutes, check with toothpick.

Icing:

You can use a can of ready whipcream, add only when ready to serve as it will melt.

Coca Cola Buttercream icing:
1/2 cup butter
3 tablespoons cocoa
6 tablespoons Coca-Cola
1 box (16 ounces) confectioners' sugar
1 teaspoon vanilla extract
1 cup chopped pecans

For frosting, combine butter, cocoa and Coca-Cola in a saucepan. Bring to a boil and pour over confectioners' sugar, blending well. Add vanilla extract and pecans. Spread over cupcakes. Serve with a coke!

NOTE: Nuts are optional and you can use shortening instead of butter as it will hold better.
